thug29,
Just consider this; GM puts a 275 width tire on the 9.5" wide wheel, and a 295 tire on a 10.5" wheel....
275/35-19 is a straightforward plus one sizing from a 275/40-18, but you're going with a wider wheel now. How it looks aside, does the tire mfr. recommend this size on your width wheel? And even if it's within allowed parameters, if it's at one end of the range, I suspect it would not be considered ideal.

So what are you trying to say...stay with the 275/35/19 rear tires on my 19x10.5 wheel or am I able to bump it up to a larger size tire? Can I go 285, 295 ....? And for the height, stay at 35 or go down to 30 ???
Thank you very much.

Of course you would, FRANKAAAY!

And, yes, for an o.e. based C5 rear wheel offset (a C5 with an C5 o.e. positive offset wheel design in mind), an ideal tire width size for an 10.5 inch wide rear wheel IS an 305mm tire. Moreover, as it is imperative that you properly match tire width sizes to appropriate ideal wheel widths, it is also important to consider the actual wheel offset of the specific wheel chosen for your application when selecting custom aftermarket wheels. Enjoy!

Well I'm back to square one....found out that the tires I ordered don't come in either 295 or 305 so I'm basically stuck with what I've got.
