convertible ???
as for road noise, I have no problem talking to my passenger or hearing the radio with the top up or down. Maybe I never expected a Vette whether coupe of convertible to have that sound isolation of a good German sedan. Different types of vehicles.
Get the vert. I wanted a manual and ended up with an automatic. It did not have the performance axle either. That was not a good combination. I had to put 3:42 gears in and a higher stall torque converter and got a good tune and now I really enjoy the automatic. I still would like to own a manual, at least for a while to see how it fits me. I've considered changing mine over, but I'd really like to get a non-vert 6spd to use for track events. I do drag race my vert at times and haven't noticed any issues with the top being up - noise-wise or stability and solidness of the top. I have noticed some extra wind noise with the top up from the windows not sealing perfectly and heard that window tip in is the place to look for a fix. It hasn't bothered me enough to pursue though because since its kind of an art I'm afraid of making it worse.
I say get the Vert, get either tranny. You'll still be driving a convertible Vette and that is one sweet ride. Color. That's totally personal preference. When I was looking for mine. I was going to get any color except red. I ended up with red and I'm quite pleased. red with black top, black int and some accents around and I think its sweet. The black top is very easy to take care of.

It is awesome and the company Caravaggio is top notch. It's worth the trip up to Canada to have it done properly. The price ticket is high for what it is but again if you live in Canada there is no other choice!
