The car and the manual states 5W-30 why change? The internals have smaller clearances. 5W-30 or 0W-30.............Or you can do a search and check what come up....................

Plenty of others do. Just make sure the oil complies with GM 4718M and Castrol Syntec does. I prefer to stick to the recommended oil but thats just me.

BTW I still have oily hands from changing my oil

The following Major Brands meet GM 4718M

Any oil that meets this spec is fine for your Vette..
Formula Shell fully Synthetic
Pennzoil Platinum
Quaker State HorsePower
Castrol Syntec
Mobil 1

There are probably more

You can use any fully synthetic oil with the specified range. I have always used what it says on the oil fill cap: Mobil 1, 5W 30.
