If you go with Z06 sizes, you really should have Z06 wheels as well. I have stayed with the very lightweight, forged OEM wheels. Continental Contact extreme or Hankook Ventus V12 are very good non-runflat tires.
People think of tire size as a really important thing especially when it comes to width. Sidewall height is less of a concern for people although it can make SMALL differences in ride and handling.
However the way i think of it is that the 2009 z51 runs a 12.4 1/4 mile with 285mm out back and the 2010+ grandsport with its huge 335mm out back also runs a 12.4
Tire size did nothing... well maybe some slight handling seen when pushing the limits on the testing track specifically looking for it, but also causes more road noise, easier chance to hydroplain in water and more expensive tires
Anyway i run stock non Z06 sizes and i have no problem with it
Just took off my original tires and put on the Hankooks on my 99 16k mile car. Its such a big difference in the ride of the car its hard to believe its the same car. I know I will have no spare but if i had a flat with the run flat tires i may not have been within 50 miles of a tire dealer that could have replaced or repaired the tire.
Depends on your type of driving, and what you want out of the tire.
I'd say it's about 50/50 between those who like run flat tires and those who do not like them.
You inquired about the size, yes I would stay with that size listed on the driver's door, unless you are preparing to buy all new wheels. Then you have additional options.
You'll hear lots of opinions about brand and type. There are less choices for run flats then non, but how many choices do you truly need? Goodyear and Michelin are tops for the run flat market.

For stock wheels, I'd just keep the factory tire sizes on them. Hankook Ventus V12 tires would be a good choice in non-runflats - can be had at a very good price.
I put Goodyear Non-Run Flat G3D3's on mine and no complaint...Not sure if they're still available. Keep a plug patch kit, air compressor and a couple of gardener's pads in the car in case a flat occurs while crossing the deserts - Flying Low - Hot Asphalt Sux
