Sure, I've regretted selling a few of my cars. Most recently was when I sold my '00 C5 - regretted it from the moment I saw the new owner drive off in it. But, it was my choice and I live with it. Replaced it with my '03 and have been happy with it.
At some point, I will most likely sell my '03 too - and if it were for a C7, I doubt I would have many regrets.
I think if you are having these thoughts you are not quite ready to sell. I'm going through the same thing with my Harley. One day I'm going to sell it and the next day I take it for a ride and fall in love with it all over again.

ummm I'm just throwing this out there but just in case you buy something else I would be glad to store your vette or your harley for you and make sure they get taken out from time to time so that they don't feel abandoned
I got to drive my friend's Cayman R. They are very nice. They handle very well and acceleration is good. They draw a lot of stares and people trying to get a better look at them.
However, I enjoy driving my C5 with a few mods more. With just a few mods, the acceleration and the exhaust sound is better than the Cayman. A few upgrades to the suspension and although it handles very well, the edge goes to the Cayman. In short, I get more enjoyment from the C5 and saved about $65k from what he paid.
If you are comfortable with your decision, then good luck with the sale.

As long as you replace it with another car that's equal or better, you'll be fine.
