AFAIK, the AC will stay on to "dehumidify" the air helping with the defrosting process. I'm not stating this as a fact, just what I figured to be the case. Hope someone can clarify this.
I have the same issue. I was told that's just the way it is--AC comes on to help dehumidify the fog on the windshield. My other issue with the system (also supposedly the way it's supposed to work) is that the AC comes on when I use the recirculate button. Stupid. I could see that when the HVAC is set on AUTO, but when it's off AUTO, I should be able to select whatever modes I want.

also with new cars the ac will only run now and then, the compressor will not run all the time, so whatever your issue is it's not going to use more gas if that's what your concern is ????

DEFOG, as it helps to remove moisture from the
vehicle. It also helps to keep the windows clear.'
There's a very well kept secret about how to make the fan blow on the windshield without the AC being on. It's very simple, but most corvette owners will never do it: drive the car when it's ~35 degrees or less outside. While driving, set the HVAC to blow on the windshield. Notice the AC staying off.

Otherwise, the A/C comes on when the defroster is selected.

And it works very well like that! Quick AC aided defrost is a good thing-especially in high humidity climes. And this also exercises the compressor and keeps the seals lubricated during off season.
No way to get the AC compressor to come on when the ambient temperature is too cold usually-starting at 55 degrees or so- has been this way on all of my vehicles-my C5 inclusive.

That doesn't explain the forced AC on recirc. The manual says:
Operating the system in the recirculation mode may cause fogging of the vehicle’s windows when the weather is cold and damp. To clear the fog, switch the system to either the defog or defrost mode and increase the fan speed. To avoid re-fogging of the windows, operate the system in the outside air mode.
What if there is no fogging? You're still stuck with AC on recirc.
FWIW, I was told that part of the reason was that people would go a whole season and never turn the AC on. Things like seals would dry up and then when warm weather returned the system would fail. So that coupled with the fact that it dries the air...
Where have you guys been? All GM cars since about 1975 have the AC compressor run automatically with defrost. It is a good thing. If you don't like it, drive to somewhere less than about 35 degrees F and it will turn the compressor off.
