Option 1 or 3 sounds easiest. Any particular reason to go with option #2?
I'm not 100% sure. Could be that some C6 seats have more functions and you want them all to work?
Using C5 rails is, in my opinion the option to go with.
Original poster: If you really want to do the seat swap, it's not hard to find seats. The for sale section of the forum, E-bay, etc. There are always ways to get the seats. I wanted them upgraded so I bought 2007 Z06 seats, the foam and leather upgrade from leatherseats.com (12-13) and went from there.

I found seats local. Just making sure I can use them. Don't want to butcher them to remove the tracks.

Removing the tracks themselves is actually not difficult. I've swapped tracks a few times-I'm actually on my 4th set of seats (stock-Procar-Apsis-C6). It's the electronics that cause an issue when swapping tracks because the wires for the controls run through the leather.
Remember-if you plan to use stock, power, C6 tracks there will be wiring that is necessary. That's why I went with manual tracks. It was just simpler and I never move my seat anyway.
