Never record in portrait (vertical) mode, always landscape. I think most people want to see the view out the windshield with maybe some interior showing and not on the side of the car, especially low down shots. I like to get the experience of riding in the car and I've never opened the door and stuck my head out while going down the road!
Actually, for Road Racing and Autocross, many peeps record outside the car (search YouTube!). It adds the element of birds eye view to the road, very cool. It gets boring to me trying to look through the dash of someone recording from inside. In addition, you can't see as much of the road

a Go Pro for the Dash, a Video Camera you wear on your head so you can see what's going on with the gauges and 2 Camera's like the one pictured above (on the side of the car)
I figure I will be able to catch all angles (inside the car, down the side of the car, and outside the car coming and going
I think it will be a cool project

1 Get a lot of it, not just the car but maybe some quick shots of the surrounding area to set up the shot.
2 - Trim that video down and when you think it's enough, trim it down some more.
3 - When creating a video, think of it as a story you want to tell, even before you get in the car. have 3-5 points/scenes you want to make
4 - Don't worry if you have to stage a shot sometimes,
5 - Get great lighting whenever you can
6 - Consider talk overs as well, sometimes that helps a lot
7 - Don't use music too much if you don't need to unless making a music video.
8 - Trim trim trim the video (I know I am repeating myself).

I have an idea to video the car going over an old steel bridge (just one of several ideas)
There is a curve going down hill to the bridge then the bridge and a long straight away (it's way out in the country)
So for about 10 to 15 seconds of video I figure it will take me about 5 or 6 trips to record and probably an hour or so to do
anyway I'll post it when I get it all together
Great scenario. So in that case, you might want a stock shot from a side view of the bridge, a clip recorded going through the bridge, then set the camera up right before you enter the bridge, one right as you come out of the bridge, and if you can set up one far enough back, a complete shot entering and exiting the bridge. Then do something similar with the hill. As you said, you might have to go over the bridge 4-5 times to get all the clips. Maybe a shot of your through the windshield while driving (like Jay Lenno does), maybe one on the inside in the passenger, etc. You can try a couple of angles, maybe do like motor Trend and put the camera all the way down on the ground when driving by.
Then you can string it all together a few ways while you think about it.
Anyway, good luck. Video work (especially good work) can take a few tries!
