I recently switched over to GHL Bullets from a B&b Rt. 66 setup and picked up some bad burbling and popping upon deceleration. When I made the switch, I chucked the worn gaskets and didn't bother to replace them. Are the missing gaskets causing the problem?
This popping on deceleration is due to exhaust gas in the stock H pipe. You can tune out the popping or replace the H pipe with an X pipe. I don't think this is caused by your gasket; myself, I've grown to love the popping.

I have an X-pipe, but it's almost 5 years old and may not be the latest style. But I guess an X-pipe is an X-pipe, no?
I would think an x-pipe is an x-pipe. You probably should replace the gaskets though just so you don't have any leaks. That probably won't get rid of the popping but just for good measure I'd put gaskets back where they were.
I would think the missing gaskets would cause more than Burbling. I imagine a Tick or Hiss coming from the non gasket sealed edges. The Burble is a fact of life with de-accleration IMOP. I agree with TORCHREDFRC, put the gaskets back.
GHLs, and most other high-flow exhaust for that matter, pop on decel even with an X-pipe - nature of the beast. I found it embarrassing and annoying so I sold mine for a Z06 catback system with x-pipe. Not as throaty but no pop or resonanace either.
But, vetdude is right, this is the nature of the beast, and primarily firing order/exhaust gas balance in the system. X-pipe reduces it, but will not fully eliminate it.
Missing gaskets or even re-used gaskets that don't seal will cause more burbbling and popping on decel. I rec'd using new gaskets and some high temp RTV. But even then you will have some popping.
