Valve Covers
It sounds like you may be talking about the baffling. I know a 2001 LS6 has baffles (in the right cover only) to separate the oil from the air for the PCV system, not sure about other models. Air (blow by) leaving the engine through the PCV port in the valve cover has to pass through the baffles causing the oil to separate from the air then drain back into the motor.
If they are baffles for the PCV system and you remove them you will have a lot more oil coming out in the PCV system then it will end up in the intake.

I just did this to a set of LS6 valve covers for my LS1 to accomodate Jesel SS rockers. I also had to remove the splash plate in the driver's valve cover. I then ground down the coil mounting thread hole dimples and filled them with RTV. Then I painted them red. Looks nice and the whole thing fit. I ran the air vent tube from the passenger's side to an AMW catch can and then to the fitting on the throttle body. No oil in intake. I also did the LS6 PCV mod when I had the motor apart for my h/c project and run that through an AMW catch can also.
