Seems like anything over 100 and my vette gets a bit unstable, kind of feels like the front tires are coming up off the ground, if that makes sense. I have brand new tires, Goodyear F1's, although they are the stock 17 in front and 18 in rear, and I do miss having 18's all around like my old car. Is it an issue of the wheel size, or is there any other mod for high speed stability?

Try lowering your front end a little also if you haven't already.... it's easy. But I'm a BIg believer in balanced and aligned tires.... that's the place to start.
mine's lowered damn near to the ground on coilovers and had just had an alignment when i tried to go real fast. it rides/drives/handles pretty terrible all the time, i guess 175K miles has its disadvantages
It could be your tires! My Goodyear EMT's always had a hard time staying straight on uneven roads. Went to Pilot Sports and the problem went away. I think it's because the GY don't have much of any radius on the endges.
Make sure you've retained the front to rear rake.. If not, the front end may be lifting at high speeds. The rear should be at least 1/2" higher than the front when measured at the factory specified points. In general, make sure the car is not "flat", nor the rear lower than the front.
I just ran mine at the track at speeds routinely between 80 and 130 and it felt very stable. Get a good 4-wheel alignment and some non-EMT tires like Michelin Pilot Sports (check air pressure - 32 to 35lbs).

I have stock (and now worn) runcraps, my car is slammed and it's rock solid all the way to 155mph (closed course, professional driver naturally )
Tire pressure (30psi cold), and a solid Z06 specs alignment on all 4 wheels makes it very stable. I do NOT have front/rear rake - my car is level (see pic).

First how many miles on your car? If the car is 100% stock and in good shape it should feel great at 175 mph. If things are worn it will not feel good. Check tie rod ends and ball joints. Then do the alignment and rake setup which is very important.
Before I got the MCM hood I couldn't get over 150 with out the car getting squirrly. Felt like alot of front end lift. 2 weeks ago I had it at 160 and it was very responsive. Not much road left to push it any higher. With the A4 and 3.42 rear I think 170 is acheivable espescially with the hood on now.

Yeah, lowering the rear so far that the rake is removed, and you lose downforce, will do that.
