I would say with the stock pre-2001 rod bolts, no more than 6500.
With later year rod bolts (or upgraded items), probably 6800 or so..
Keep in mind I'm talking about RPM's sustainable over the long haul, not the occasional missed shift.
There are some lunatics over on LS1Tech, turning stock motors up to (and past) 7000, then wonder why they end up with "vented" blocks.
