The service manual says you should. Even if you didn't have to replace the gasket, you would still need some gasket maker for the front and rear sections. I would be interested to see if anyone has done it without replacing.
You'll have a hard time finding anyone who replaces these during intake swaps. All the tuners and CF members re-use them, they will be fine, no gasket maker required.
I changed them on my 99, because when i got the manfold off, the gaskets were close to being recessed in the grooves, which would not give a good sealingf surface. you could gamble but why take a chance for all that work and the seals are not that much.
As long as you don't damage them you should be able to reuse the over and over. All they are is 8 big over priced O-rings. The only time I could see replacing them would be if they got damaged, or maybe if your replacing the intake with another one. I could see once installed and squeezed in place over time they may not fit back in another intake very well. Don't use any sealer on the intake, the LSx intakes seals no oil or water like the old SB.

No gasket maker is required as there is no where to put it on a LS intake. Your rubber gaskets should be just fine for reuse.
I am doing this same project this weekend. I went ahead and purchased a new gasket set. Felpro's from rockauto for $22. I figured it's cheap insurance.

I re-used mine no problem. You do need to be careful when re-using the bolts though. Make sure the threads are clean from any Loc-Tite blue or other threadlocker that may have been there before. Apply a drop or two of fresh LT blue and torque (critical) to specs. No worries.
