how much performance would i lose going from summer tires to a/s tires.i will probably never be a good enought driver to use 100% of the vettes capabiltys.but i love to drive the twisties.

It depends, do you drive the car in the wintertime or rain? There are several great summer tires that perform well in the rain (Goodyear GSD3 as an example).
Personally I do not like all-season tires, I think it is too much of a compromise. I have 2 sets of wheels. Summer/non-snow and the Goodyear M&S for snow. Doing this extends the lifespan of both sets of tires.

My car has only ever seen snow once and I generally avoid going out into rain storms with the vette (I have been caught in rain, but that is life). If you can find a hi-perf tire that handle well in the rain, go for it.
If you drive when it is below 30 degrees F outside and can potentially drive on snow, then get A/S tires; otherwise, I recommend the Goodyear GSD3s for superior dry and wet weather handling.
I drive year round in rain/snow/sleet/mud with Michelin Pilot Sport PS/2's and while some of those conditions aren't necessarily easy or fun they can be dealt with...
Either get two sets of tires or deal with driving a bit slower in adverse weather conditions...
