Since most all the better brands of headers are already stainless, are you asking about whether or not to get the ceramic coating on them as well?
Sure, ok...I am not really exhaust savvy this is the first time I have ever even thought about diving into the header world, but trying to do a complete exhaust from headers back.
So I guess then I will re-phrase my question...should I get whichever headers I buy ceramic coated or just leave them as is?
CERAMIC coating SS headers will significantly reduce under hood temps and keep the exhaust hot all the way to the collector. If that is what you want, you can have them ceramic coated.

If you also do not like the fact that stainless will discolor from heat. IMO eventually look like crap and stainless over a long long period of time can rust. JET HOT coating the only way, LG will ship them to you already done.
There are different grades of SS and each has advantages over the other. Yes SS can and will rust. Especially when connected to dissimilar metals. On submarines, we see stainless corrode all the time. Especially if it is in the vicinity of a more noble metal like Ti.
