These gaskets, as well as the throttle-body gasket have a good history of re-usability. Barring any obvious tears, damage, etc it will be pretty safe re-using them. I have in the past with no ill effects.
Don't worry about the foam pieces on the bottom. They are not a critical item. If you can save them fine, but if they get damaged don't worry. If the MAF sensor is still installed, you might want to remove it too before cleaning. Even if it were to be damaged though, you can always swap over your old one.
If you do use Simple Green, the only precaution they usually mention is to not let it dry or sit too long before rinsing. It's safe for most all plastics and there are some brass threaded inserts for fasteners, but I don't see it being a problem on brass.
I got my 8 O-ring type rubber gaskets at Kragen's.....for about $20 if I remember correctly. They are very durable! Go on the websites of the parts houses. They all have them.
