I have used SLP and hypertech. Is yours just the stat or does it require the housing with the stat? I have a new 160 SLP stat that a friend never did pay for but it's just the thermostat. I know 2000 has the stat and housing togethor but I don't know about the 01 and up.
As a follow-up to that link, I ended up putting in the shortest shim that I tested. In cold weather the motor runs at around 178 degrees (maybe down to 176 coasting down a hill). I think it will run in the low 180's in warmer weather.

I did the same thing as you. In late November, I was seeing coolant temps. in the mid 170's, with a .100 shim in my factory thermostat. I reduced the shim thickness to .050, to bring the temp. up about 5 degrees.
I've found that the stove top method of testing will get you in the ball park, but it takes some actual driving to determine the end result of the added shim.
I haven't road tested yet with the .050 shim, but I think it's going to be just about right.
