You may also consider to use with success the WaterWetter (ccolant add), as well as some SI-1. This is their Fuel System Cleaner, Injector and Valve detergent (check out the website RED LINE, you will find a shear endless amount of tech informations, for free....).
I have run Redline in a number of cars and now have Amsoil in the Vette. I think you will notice with the synthetic, that the shifts seem firmer under load and softer under normal driving. At least that is the best way to describe it. I don't think you will notice a "performance" improvement, but the synthetics will take more heat which is the number one enemy of an auto trans.

So front to back, if we were going to change fluids to Red line what exactly should I order and how much? Probably not the best question either, but could someone like Jiffy Lube do the labor? Dealer prices around here are ridiculous and I don't have the means to do myself. Would like to do all fluid changes at the same time.
I see you intend to move to a wise decision. YES, change all your fluids at the same time when the car is already on the lift.
RED LINE gives you all what you need in an integral approach. You will never regret to having followed your intention:
- Engine => SAE 10W-30 (is API SJ, resp. ACEA A3-96), as an alternative, when your engine often sees higher oil-temps temps due to your driving style, use => 10W-40 (this is GM-approved, SVC manual page 0-40)
- Trans A4 => D4 ATF (meets/superceeds Dexron III resp. GL-4). When you change the Trans-Oil, have a new filter set ordered.
- RR-end/Diff. => 75W-90
You may also think to use some R-L "WaterWetter" (this is an supporting wetting agent for enhanced heat protection around critical engine areas) as an add in the engine Coolant.
You may also think to use (from time to time) some SI-1 Injector and Valve detergent (this is a protector for the entire fuel system, the injectors and the valves.....deposit...). One bottle treats about 100 gallons of fuel.
About the quantities to order, pls check with your user manual, as, I am sorry, I have the actual qty's not by hand, except engine, which takes max. 7 quarts, but buy in the same time some spare. You might need it anyway.
As for a purchase order, there are many of the C-Forum Vendors which are in the business for supply, eg => THE LAPD and CAU-LLC., to mention some few.

So what about a local oil change spot doing the labor? Could they handle all of this? For those of us who don't have the skills ourselves, would you trust this to a lube shop?
I am really sorry, but as I am installed overseas, I can't comment on any "Lube Shops" you have in the US. If I try to compare with what we have here around, generally the work executed by and in sorta "Discount-lubers" and -screwers is often far from "state of the art". To be fair at all, there are exceptions as well!!
If you can trust to any of a nearby GM-Dealership, I would give them preference. At least they SHOULD know about the some special procedures to follow when it comes to "oily changes" with your car (eg the C5 has to being lifted at the rear some higher than front, to allow to drain correctly the oil pan.

With our trans being a sealed unit I'm sure most discount services will not have the special GM pump neccessary to change trans fluid. I know Redline is a great product but unless it's changed you will find from forum archives they do not carry the API starburst symbol and using something that doesn't meet GM standards could cause warranty issues. I think GM, Mobil, Redline and other recognized 'fully' synthetic fluids are just fine otherwise.

Redline does not carry an API license. They buy their additive package from another vendor, and through a loophole in API certification, are allowed to list the API service (SJ).
