I have a 98 with the IAT seperate from the MAF, and want to keep it seperate. I have a Delphi 85mm MAF that I would like to use for flow purposes, but it has the IAT mounted in it.
Does anyone make a short harness/connector, that will let me plug my MAF harness into the "newer style MAF? (obviously minus the IAT wires)

These are both the same. There is a 5-pin connector that splits into two wires, 1 with the 3-pin MAF conn and the other with the 2 pin conn for the IAT. Just leave the 2 pin floating and leave your IAT plugged in normally.
I don't know of anyone that sells a jumper harness but, Autozone and Advance Auto both have a catalogs of numerous plugs and connectors. You can purchase a plug or maybe a pigtail for the MAF and just rewire it to the new MAF.
The newer style MAFs with the integrated IAT are considered to be a better design and provide better IAT data than the old bridge mounted sensors. May I ask the reasoning for wanting to use a bridge mounted sensor???
I am running a SC, and have the MAF mounted right after the Y-pipe and have the IAT mounted right before the TB and AFTER my meth injection. Based on every tuner I've spoken with, the best place for the IAT is after the meth injection on a SC system, and you can't run Meth through a MAF
