My 2002 has the check engine light on continuosly when driving. It has a rough idle like it wants to die but at 10-20 mph and above it smooths out.

The check engine light has never come on before in the 6 years I have owned the car. The car sat about 2 days before I drove it andthis happened. Does letting the car sit without being driven cause a malfunction in the air seals or the pcv lines?

No. You will have to peform a physical inspection....as already suggested.
Any other symptoms? Such as reduced mileage, black smoke from tailpipes, coolant temp reading lower than usual, anything?
It's odd to think that the MAF sensor would dirty, most filtration systems prevent this, even oiled filters. It could be a bad MAF sensor perhaps. Tap the MAF with the handle of a screwdriver while the engine is idling and see if it stumbles.
Like mentioned above, do physical inspection too. It could be that a vacuum hose has a crack or came loose.
Unless you dig in and start systematically looking for air leaks. We can GUESS what it is all week long without point out the exact problem area.. That’s the FIRST and most logical place to start.
Go and look for any place that allows un-metered air into the engine. Any ducting between the MAF and TB and ALL the vacuum lines and fittings. Especially the PVC system hoses and fittings.
I heard a hissing noise under the hood. Investigated and it turned out that of two my hoses and the rubber boot on the alternator wire were all chewed up by mice or something. Had some trees removed this week along with bushes I guess some mice had their home disurbed. The car usually sits in the driveway and it sat for two days dont know how long this has been going on though. Taped up vacum hose going to master cylinder and no more codes drives fine now. The chewing looks nasty though on those two hoses.

Guess they were pissed about being displaced from their home. Tape is ok for a temp fix, but not a permanent fix.
Only 1 of the two hoses is available from the dealer. GM has discontinued the other one.
Just get creative. Any preshaped coolant hose will work, or if need be, just use a straight piece of fuel line (not sure what size hose you're talking about). The brake booster hose is 3/8" though.
