Default Odd higher than normal temp

So I've noticed that my engine is having these weird changes in temp. A little history on the cooling system. Waterpump died so that was replaced, I also replaced with a brand new stock thermo, and put brand new 50/50 dex in the system. Did all the normal burping and all that. Well it stayed at a constant 190 for a couple weeks. Then I looked down while I was sitting in a bit of traffic (on a cold day) and my temp was around 230. After I started moving again the temp went back down to 190. Just did a cross country drive and as normal it would hold at 190, but then would go up about 5-10 degrees once I hit the desert. Fluid level is perfect as well as there are no leaks or anything else. I always check the obvious and not so obvious. Any ideas or am I being over sensitive?

Are your fans working normally? Any codes?
