I would say relax and have a quick look for something in the radiator. 210 is nothing to get worried about. Mine does that and goes right back to 190. Was your A/C on?

Yup Clean the radiator out with an air hose at least once a year.

So much dirt, grass, Mikky Ds bags and dead Smart Cars get sucked up there

Several years ago, my C-4 (1996) sucked up a t-shirt and the temps jumped 20-30 degree's for a couple of days.

Your temp is fine. The low speed cooling fan is commanded on when the coolant temperature reaches 108°C (226°F). It is turned off if the coolant temperature lowers to 104°C (219°F). The high speed cooling fan is commanded on when the coolant temperature reaches 113°C (235°F). It is turned off if the coolant temperature lowers to 108°C (226°F). When the A/C is on and the coolant temperature reaches 85°C (185°F), the low speed cooling fan will be turned on at vehicle speeds less than 56 kPh (35 mph).

This is right from the tech manual.

Also if you have to burp the system use this technique. Here is the thread about burping the system from the heads. IMO the best and only way to do it. You may still have air in the system you can also put your new and old thermostat in a pot of boiling water and you can see it open to insure they work.
