230 may not be alarming, but something isn't right. I have a stock tune, stock thermo, stock fan settings. I drove around town yesterday and the temp stayed around 190 all day. Putting in a 160 thermo for regular driving in my opinion is a waste of time and money, not to mention the lower oil temps and winter heating change. If your car is cooling properly due to sufficient air flow passing through the radiator, 230 is too high. If you are sitting stopped at idle on a hot day, 230 is understandable, just turn on the a/c and let the fans cool it back down. If the radiator/condensor is blocked by grass, plastic, etc, then the fans won't take it back down.
If as you say, the temp runs up to 230 at 85 mph on the highway, the fans won't help because they don't run at that speed. Again in my opinion, you are not getting sufficient air flow through the cooling fins on the radiator because either the radiator is blocked or the condensor in front of it.

And if you happen to live in a part of the country that typically sees 90 degrees on Christmas Day and hasn't dropped below 20 degrees in over a century? Besides, cooler engine equals more HP, doesn't it?
