I don't think I understand your question... And you know a lot more than I do so I'm guessing you're pointing out an error I made somewhere?

My answer to your question as I understand it is that it doesn't but I don't think I ever stated that it did.

The fans' turn-on/turn-off temps (both low-speed and high-speed) can be easiliy changed in your PCM by a tuner using any one of several popular tuning suites in use today i.e., EFI Live, HP Tuners, or LS1 Edit, etc.
Your skip-shift function (and light) can also be turned off the same way.

I have a 2000 and the original owner. I live in Mobile, Al. and it has been in the upper 90's the past week. Highway speeds the temp stays 200 or below. When I get in traffic it goes as high as 234. I had my cooling system flushed today. Still runs around 200 on the interstate and in traffic it still goes as high as 234.

Soo many extol the virtues of a 160 degree thermostat, as being responsible for lowering their normal operating temperature. That being said, the thermostat rating, is the opening temperature, at which time...coolant begins to circulate through the system. Given that the car is driven log enough, and the ambient temperatures are anything but Winter like, the engine is always going to operate above 160 degrees. The thermostat (after it opens) does nothing to regulate the temperature...let alone...lower the overall operating temperature.

My car is supercharged so it runs a little hotter, but probably not much different than stock cars in sweltering 95+ temps. I got sick and tired of having 215+ temps in stop and go traffic and low 200's while cruising. Switched to Dewitts radiator and Spal fan combo and never looked back. The fans come on at 197F, never seen the temps go above 199F, even after doing a 120mph pull (oil temps at around 220F, ambient around 97F) came to a stop and the fans kicked on, it hit 199F for a minute, and then temps dropped down to 190F over the next couple minutes.

Edit: Also my car is for sale, somebody buy it quick before it's gone

In slow or stopped traffic, it is all about when the fans engage. A 160* T-Stat will only lower the temp when the fans are moving air.

No air = High Temps

Just a simple CPVC tube with small holes drilled just above the cap with hose connection at the top .... The CPVC primer and glue was more expensive then the parts ..... thus the reason I put a handful together for anyone who didn't want to fool with building their own.......
The air type works as well, but thought the water cleaned better and not everyone has a compressor .....

Hilton Head is a bit cooler -usually 94* - but we have that ocean breeze!!
this seems a lot like mine - numbers are about the same - lingers around 224* at idle in traffic - drops when things get moving..thanks much for the info - still going to pull the shroud off and do the interior cleaning job - can't hurt - last Fall did the clean out in front of the radiator where that black plastic fascia forms of "v" ---had some Spanish Moss in it!!!

Sunday,it was approx 105 near Charlotte,NC.After about 10 min,my 02Z settles down to 185-187 on the interstate.

Stock thermo.I give the rad a good water hosing every time I wash the car.

That's surprising for a stock cooling system. The cool thing (pun intended) is that I can settle down to those temps in 100 degree weather while in stop/go traffic with the monster spal fans sucking in a ton of air through the dewitts radiator.

The factory installed thermostat does not even BEGIN to open until the coolant is 187 degrees.
