Why do turn signals quit working periodically on my C5 2001?

You might offer a little more information about what's happening if you want a serious answer. You got one but, another is that the light sockets get hot and burn up and they'll make poor connection and you'll have turn signals one day and the next minute it quits and maybe a day later it starts back up working again. Those are light sockets and you can buy them new from any number of sources online. They'll come with a pigtail and you just have to wire them in. I bought two recently for about 10 bucks each if I remember correctly. But I sold my car and they went with it.

Next time they stop working, push on your hazard switch located center of dash. While pushing apply a bit of side pressure. If this is the problem you do not need to replace the hazard switch as there is an adapter you plug inline with the turn signal wiring under the dash near the steering wheel which solves the problem. Do a search it's all here on the forum.

Assuming the lights and wiring are stock ( not LED's ) then I will add to the Hazard Switch pile. The next time they don't work you can also give a sharp but not strong enough to break anything whack to the dash above the hazard switch. Sometimes that will cause them to work.
The flasher relay for the turn signals is one in the same with the 4-way flasher and contained as one unit in the hazard switch. I changed mine out at home, if you feel comfortable pulling the stereo then you can change the flasher. It's a bit of a struggle to squeeze your hands in to remove the wiring connection for the switch but my hands are more like bear paws than slender hands and I managed to do the job without too much cursing or anger. Good luck.

Please let us know what you did to resolve the issue. Yep, that hazard switch can cause it. So can a bad multifunction switch.
