0W40 Euro Blend oil is a very good choice for use in a LS1. The Mobil 1 you buy today isn't the same as the Mobil 1 you could get back when the LS1 was in production so thinking you have to use 5W30 Mobile 1 because it's on the cap fill cap is rather pointless.

Found this chart. It shows the different Zinc and Phosphorus levels for Mobil 1 products. As you say, the Euro spec 0-40 seems to offer better ZDDP additive levels than regular M1. It would be interesting to know what "original" M1's additive levels were - I am reasonably sure I read that it used to have a higher ZDDP level than today. Walmart $25, BTW.
I have been running the Mobil 1 Euro 0w-40 in my warmed over LS6 engine for this reasons as well as the slight wider than stock bearing clearances. There is also the new formulated dexos rated Mobil 1 0w-40 now being used as the factory fill on all the 2019 C7 models as well as the retro approved filled for all '14-18 C7's as well.
The key issue here is time (+20 years now for the first C5's) and the changing ratings on motor oil over those same years due to things such as emissions requirements/equipment, changes in pump gas (ethanol blending) and the OEM requirements tied to CAFE ratings. Speaking in general terms, we have seen lower levels of the ZDDP levels with the changes from SL to SM and now SN rated oils. This is less sensitive with a hydraulic roller camshaft than say with a flat tappet camshaft, but oils with higher levels of ZDDP in our LS engine are still a good thing as far as "insurance" and piece of mine.
