Change to 18” tires
Since I need new tires -I am thinking of changing to 18” tires both front and rear. To avoid any problems what are the best wheel and tire sizes (both new) to avoid any problems - fault codes? What wheel width and offset? What about tire sizes? Any suggestions appreciated.

Wheel widths 9.5 to 10 and 10.5 to 11

For tires sizes, look at the tire diameters, you want the back tires to be 1/2" or more larger than the front. Sizes depends on the wheels widths, offsets should be very close to the current offsets for C5 Corvette, whether you keep with the base model or Z06, look at the offset of stock wheels and buy accordingly. Wheels are a personal taste, look at the various offerings, e.g. ebay, and find someone who is reputable to buy from. the wider the wheel and tire the higher the price.
