Since we've opened up another OP question let me add some more.
When I'm in traffic (cool day and with an oil cooler) my oil temps were @ 200+ and the pressure got really low at idle. Like 9 psi sitting at a stop light.

According to GM, you can get down to 6 psi at idle and be OK. However, as a reference point, my car generally doesn't get below 27 psi at idle in gear (around 500rpm) with the oil at 212 degrees.
As for the original question on this thread, I think most people are getting around 45-50 psi at higher rpms.
