Adding z06 sway bars?
The other Z-specific item is the tranny - the MN12 6-speed (vs. c/v MN6) has lower gears (higher numerically) for better acceleration. I've read where some folks say it's like having 3:73-3:90 gears in a Coupe. The rear end is also beefed up a bit, as well as the clutch.
Either way you go, they're fun cars - if you score a coupe, find a Z51 optioned car (it's an incredible cheap option, was like $350 in 01/02 for the handling upgrades you get), and toss on some non-EMT's/Z06 wheels/tires and you'll be at like 90-95% the handling of a Z06 for a pretty good bit less, and have a really fun targa roof! (Well, I'm in FL so open top cars are fun just about all year 'round). You'll also (depending on year) have some additional color options.
Go with a Z06 and you'll spend a good bit extra, have the best (stock) handling/acceleration, but you'll give up a little ride quality, the removable roof and availability of a few options (the coupe/vert available Sport seats are much better than the Z06 seats, which are just base models with some embroidery). There is an interesting interior option for Z06's called ModRed, a two-tone black/red package for some of the panels and seats (IMHO, it only works with a couple of colors).

I realize the differences in Z06 to coupes are the shocks, springs, sway bars, brakes, weight, engine differences, is there anything else I'm missing? I'm curious since I might be going with a coupe in a few months but love the idea of race-like handling.

The aluminum 2002 end links will fit. Make sure you torque them to spec. Two ways to do this. Get a crow’s foot, off set socket to put on the torque wrench while you hold the center star bolt or hold the nut while reverse torquing the center star nut.
The ride comfort is dependent upon the shocks and springs more than the sway bars. What they do is minimize body roll while cornering. There is a point, however when a thick bar, like a T1 will stiffen the ride under certain conditions but Z06 bars wont. – C.

I notice a little bit harsher ride but nothing objectionable. I also notice that it is easier to induce throttle controlled oversteer than it was before. :D
I have a 02 C5 coupe with the 6 speed.
Next on the hit list are wheel/tire upgrades then brake upgrades.

Your 2002 coupe has metal end links. All you need are the bars and bushings (part numbers listed above)
