Yeah, I always wave at Harley's, and they wave back about 90% of the time. I think it's a gesture to say "hey, from one American icon to another."
You do realize of course that you are endangering the harley rider don't you? If he takes his hand off the bar, there is a 90% chance that the bike will go into a violent tank slapper and spit him on the ground hard.
And for some reason I always see more Corvettes when I'm in my WRX, and more WRXs when I'm in the Vette.

I'm a bugeye driver, myself. Usually when I'm in the Vette I give the Scoobs a thumbs up. Most Scooby drivers for some reason are some of the most truly passionate and respectful of all car enthusiasts, and respond well to the kudos from a car with 3 times the displacement.
When in the WRX, I'd usually give the other Vette drivers a little throttle blip (or rev-match downshift if they're going the same direction) to see what they're about, lol.
Then again, I have a liscense plate frame for my C6 that reads "My fast car...Is a Scooby!"

I guess it's just because they are both American icons, that is the connecting factor right there. And waving to another 'Vette or Harley owner just is a way of showing your mutual respect and passion for the car or bike you both own.
With so many a$$holes on the road doing mean things to other drivers like flippin' them the middle finger, a little wave goes a long way for me.
I wave at other Corvettes. Actually when I am with Jonathan (salesperson here), we wave and make sure the other people wave back even if we have to slow down and put the windows down.
