I also bought the 3LT only to get the HUD. As you've listed, I initially didn't really care about the other features. Here 6 months later, I've never moved the seat (always all the way down and to the back), and I've never moved the steering wheel (it's set so the gauge cluster is perfect for me).
The one feature that I thought was a total waste was the heated seats...but surprisingly, I use them all the time. It's never really that cold here in SoCal, but I've often pulled the top off on a cool evening drive home from work and cranked up the heated seats and heater....it's really a nice way to end a day!
Also, if you really like the chrome, it's a much easier thing to do after the fact.

More than 90% of all Corvettes have the 3LT Option group, so by not having it you will get significantly less when you sell it/trade it in.
Someone here commented that he test drove a Corvette with the HUD and couldn't see it with his polarized sunglasses. I have many different kinds of sunglasses and I've never had an issue with being able to see it just fine. The HUD has a brightness control that has a setting for both day and night driving. Could have been that the HUD brightness was set too low to see.
As far as the HUD being a "gimmick", nothing could be farther from the truth. It is the most useful, functional option in the car. The HUD display appears to be sitting about 3 feet in front of the car and you can easily see your speed and tach while driving without having to take your eyes off the road. I am able to keep my speed under control much easier in the vette because of the HUD. You don't even realize that you rarely check your speed when driving a car without a HUD until you have one.
My 2001 vert had everything I could imagine on it. HUD was nice and so were the memory seats.
My 2009 is a 2LT, chrome wheels, dual mode exhaust, auto. Don't miss the HUD. I can't recall why I thought I needed the memory seats.
I looked at the list of options and decided that the 2LT had what I really wanted. I've had my 2009 for almost a year, and I am still thrilled with it.
I have not added a single mod, so that probably makes me an outcast.
