So, that means you are getting about 16.1 mpg, which is on the low side unless it's all stop and go city driving. I'd wager your driving habits contribute to that number more so than the A/C compressor drag.
Every gas/diesel powered vehicle loses a little economy when you turn on an A/C compressor. The Corvette probably is less affected than most. As a reference my Grand Sport gets about 21mpg in city driving in the Phoenix summer.

Most Corvette owners aren't really concerned with trying to wring the last mpg out of the car. Drive it how you like, be cool and comfortable, and enjoy it. Having that performance at your right foot is worth the cost of fuel.

all i do is city driving as i live in the city. my work is 30 mins from my home so i do get in to traffic abit coming home. i almost never use the highway

Actually, you can expect better than 24.7 on a long trip.
My wife & I did something under 6,000 mile round trip driving from Wisc. to Cali. and back home to Wisc. about a year ago. We used the ac quite a bit in our '08 A6 and got 27.8 mpg. No, i didn't take it easy. Had some triple digit speeds here and there.
Then again, the gearing you may have has something to do with it.

I can't. I'm not worried about my A/C. My right foot drains my gas.

It's the three mile commute. Engine never gets hot.

I agree with this.

If you have never had the engine looked at, it may be time to replace plugs and wires. May not be an issue but since you are concerned about mileage, it's a good place to start.

Totally agree with Garry. I own my Corvette (1999 C5 Coupe) and a 2015 Ram 1500 Hemi. I seldom turn off the AC regardless of the season. I like to work the compressors to maintain proper pressure in the system. I get about the same mpg with both vehicles. Sure, at times I've got a heavy right foot. That's why I have a Hemi and a Corvette. But I'm also 72 so most of my racing days are behind me. My oldest daughter gets the mileage in her Rav4...when she wants to have fun, she goes for a ride with dad. Enjoy your Vette and drive it the way it was meant to be driven.

At higher speeds, Ac will have less drag on the car with the windows up, then windows down and the AC off to cool you down.

As for slower speeds, Yes a/c compressor puts drag on the motor, so you gas mileage will go down.

Newer air conditioning compressors eat a lot less power to run. In my 1.4 turbo Cruze I don’t notice any better mpg with the AC off. 44.5 on my last trip to SC.

For me the "problem" turned out to be my right foot...which really isn't really a problem. On highway cruises I can EASILY get 25mpg...usually closer to 30 if I behave. On average though it's around 27-28. Very respectable for the fun factor.
