Sometimes when I want to past another car,even though I don't mean for it to happen, my car feels like it races too high. ( hard downshift)

I was wondering about that myself with my A6. Downshifting is harsh as well as shifting when taking a turn (automatic, not paddles.) Straight line acceleration seems to be pretty smooth though

I've got the A4 3.15 rear, and the downshifts at 50-60 were nutty violent...could break tires loose flooring it at 45.
Short answer, get it tuned. Just put a cam in (other mods headers, etc.), and 21st Century tuned it...unbelievable difference. My car has always been violent, and very hard to control downshifts. I'm a drag racer at heart, but you couldn't feather the throttle to get traction back, it would go upshift and die, and like you say any downshift in street driving was rough.
Tune got it out, and I have much more control and it pulls a ton harder. A good tuner can change how long it holds gears at different throttle positions, line pressure and downshift/upshift characteristics.

If you want it smooth as it gets for a Corvette, make sure the shift quadrant is in D. In S, shifts will be more aggressive even when the transmission is shifting automatically.
