What is the trick to disconnecting the negative cable on the battery??
By trick do you mean what does it do, or how dow you do it?
Let me try to explain, disconecting the battery will reset many things on the C6, you may loose your radio presets, you will have to re-index your windows, you will erase Check Engine Light codes, you will erase timing tables (car might perform better afterwards, at least in the short term).
If you mean how to do it, the cover on the negative side of the battery is a little tricky at first, there are two tabs, one on each side that must be squeezed in together to release the cover. Once the cover is out of the way, you can loosen the nut (probably an 8MM but I'm not certain) and lift the cable off the batery, it will then be disconected.
will one of those battery "plugins" at the cig. lighter save the hassle of resetting these items?
Yes it should, but at the same time if you are disconecting the battery to clear some of the computers that type of device may defeat the purpose. Besides resetting the windows is a 30 second job, and the radio settings are not usually lost....but I wouldn't bet the farm on it.

I bought one of those at Sears but have been too scared to use it. Got it out of the packaging, and found a little tag on it that read something like "Using this thing may cause your airbags to deploy." Don't know how that could or would happen, but I considered myself warned. Anybody know what they're getting at here?

In a garage if they are working on the front of a car they will usually disconnect the battery to prevent accidental airbag deployment. This could be caused by heavy blows to the front (bodyshop) or by disconecting the airbag wiring to remove, add or modify a body part (bodyshop or mechanical), so if you have such a device plugged into your lighter and you go messing with the airbag system, it could have enough power to trigger the airbag.
If you are not going to mess with any of the airbag systems....then you should be fine.
