Anyone have the instructions from the factory manual or a how-to on doing this? I'm aware that the air bag needs to get dropped from the wheel, but do you need to disconnect it? Dealer wants about 2-hours labor to do this and we all know how we feel about dealers working on our cars.

2 hours.... OUCH.
This is more like a 15-20 minute max job.
The airbag is held in with a spring that is depressed through small holes in the rear steering wheel cover. If you look on the side of the steering wheel housing youll see the 2 small holes. You press in that hole with a small metal rod the same size as the hole, It then just drops out. No need to disconnect it.
The spoke covers are held in with two torx screws and thats it.
Steps: Disable airbag (or not, at your own risk), Drop airbag out, unscrew 2 spoke screws, replace spokes, install the 2 screws, snap airbag back in place. Done.

Why not just buy painted/ glue on covers? Are they damaged? Are you replacing the whole steering wheel?
