2.73 performance axle with paddle shift is available.
2.73 also comes standard in the Z 51 package with the other stuff.
I assume the standard ratio with auto is still the 2.56 same as 07, but I couldn't find it in the brochure.

Not true. The 2.56 gears are standard and 2.73s are optional (as part of the Z51 package or also as a freestanding option).

Guy's I have 07 C6 A6 Z51 and I just installed an exhaust and the rear shows a 2:56 gear, not a 3:15. so how can we be sure the Z51 has as far as gears.
