2011 G.S. lowered?
What should be the correct height and where is the correct place to measure?
I placed a floor jack under the end of the spring and lifted enough to get the weight off then ran the bolts all the way up until they were seated.
BTW! You may need several road tests and adjustments to get your desired ride as the suspension needs to set after each adjustment.

Correct way is using a GM tool under the car using the control arms BUT most use the center fender well through axle to ground, or the finger count between tire and fender lip.
I am at two fingers and used to be a comfortable three and a half.
Lots of measurement numbers if you do a search.
The rake should be present to, in the area of 1 inch or more.

Each turn will change the wheel well height by about 1/8", after settling. Decide how much change you want, calculate the turns, do it, and drive for at least 200 miles before checking and then getting a wheel alignment.
Even stock, the rides heights are all over the place on "identical" cars, and GM has changed the specs at least twice.
I've done a lot of work on this, and decided that it's like measuring with a micrometer, marking with a piece of chalk, and cutting with an axe.
Pick something that looks right when compared to other cars, make sure the "rake" is about 1 1/4" to 1 3/8", and that's good enough for normal use.
