Anyone know if poly UCA and LCA bushings help with making alignments easier and more consistent? Wheel alignments seem to be a pretty lengthy process using camber plates.

Not a bit easier, they only help with keeping the alignment to narrower changes whe under heavy loads such a cornering, braking and acceleration
I get frustrated with alignment shops, it seems every time I want an alignment I have to train the person doing the work, then I get charged for the extra time it takes. I'm using a camber kit, I've had the eccentrics pop out while on the track and it isn't fun. I'm seriously considering doing my own alignments as the costs are becoming prohibitive.
The bushings help keep the arms from deflecting as much (so while cornering it helps keep the alignment where you want it a bit better), but in terms of slipping of the lower adjustment plates, the camber kit is what you need.
If you go with delrin, Borg motorsport makes offset bushings that can get you even more camber
