The new GM front brake rotors I received for my 2007 Z06 are 100% prime painted including the contact surfaces at the brake pads. Do I need to remove the primer at the contact surfaces, or does the initial braking process take care of that?

Mine were the same....first couple of stops scrubs off the coating. However, before you mount the rotors, you should wipe down the braking surfaces (front & back) with brake cleaner to get rid of any oil or contaminants from the manufacturing process on the surfaces.
When I plated my rotors, I put the old pads on. Then drove it a bit to wipe off the plating in the swept area, before putting the new pads on. The old pads then went in the trash along with the zinc plating.
It was an extra step, but got no crap on the new pads.

I would not be concerned, braking will clean it off. Another poster recommended cleaning them off first and let the old pads clean them up and toss old pads away due to pad contamination. If that's the case, what happens to all the road grime that gets on pads from just daily driving? Wait......Does that mean my new pads are now contaminated? Now I have 4 cars I have to redo!!
