No, you're right, that totally isn't the composition of the interior panels. What appears to be cheap, injection molded plastic is actually solid carbon fiber with mahogany and alcantara accents.
Look, everybody respects the Viper; it's an awesome car, and it might be the last no-holds barred supercar left after Lambo got Audi-fied, but the interior is incredibly weak. At least Corvette made some attempt with the later C6 3LZ, etc. packages to re-vamp the interior. The viper has good seats (by which I mean, they hold you), but that's it. Look at the center console in the viper. It is a piece of silvery, GI-Joe quality plastic. Compare this:

other than some very strong metal components, all the surfaces in the Viper are plastic. That's why FIAT's touch is going to be exactly what it needs. If it keeps its build ethic but has a Ferrari interior, it might be the best purist supercar on earth come next year.

omg!? We DO have a benz by comparison. That interior is hideous! I was so intimidated by it's unsightly long hood, that I never got close enough to look into those ugly things.

Just a drop dead gorgeous American beast with all new lush interior. Hard to believe anyone would drop 300k on an Italian sports car when they could have this for 100k. (And the Viper would probably give most Ferrari's and Lambo's a run for their money, and beat the pants off them in 0-100)

Definitely doesn't look like a ball of pleather and plastic anymore. If the Italians have worked their magic on it, it is going to be serious competition for GM. Also, note the passenger seat, the way it looks like it would actually hold you in a corner. GM should look into that.
I'm not trying to put the new Viper down here. It's just that I don't think the emperor's new clothes tell me much.
