I was carjcked in Memphis in 1997, in my then new (less than 2 months old, 1,250 miles) Corvette. Top was on, windows were down waiting on a friend in a gas station parking lot. I was looking down at the radio and was taken completely by surprise. One second I'm messing with the radio, the next I have a gun against the side of my head with someone telling me to get out... I got out.
They found my car less than 10 miles away in an industrial park against an office building, which it had hit at high speed.
The guy's finger prints got him caught, 16 years old. I got my car back 7 momths later (was never right) which I promptly sold.
Convertible, coupe, or tank. Be aware of what's going on around you!
Gotta love that Memphis scene. That's why both my wife and I have concealed carry permits. Nothing like driving in the vicinity of the airport in the middle of the night, which is when my employer flys.

That would be us! If I'm going in at night, I usually drive my pickup, but for daytime departures, I take my '13 427 convertible. The C7 is for the wife, who works at Fedex HQ on Hacks Cross. There is already a Crystal Red Z51 coupe in the parking lot there.
The worst attack I've had in a convertible was when I was riding through my local small town in my S2000 CR with the roof off and for no apparent reason a teeny little tree frog fell out of the sky onto my shoulder. Everything was a blur after that, I think I shot him off with a 12-gauge.
If somebody carjacks my C6, roof on or off, they're welcome to it. It's fully insured and they won't get far before OnStar shuts it down. Then they get decades of prison time under those delicious federal carjacking statutes with huge minimum sentences.
Whoever thinks they'll just pull their concealed carry piece while still seated and belted behind the wheel, please try it first with a full-sized replica of your gun in your actual carry rig. Might not be as easy as you think, or even possible. Don't count on shooting them as they depart, since they'll be driving it like they stole it and will be well out of pistol range by the time you can get your gun out and the sights aligned.
Many years ago, a woman I worked with was driving her convertible thru town, and while at a red light, a guy jumped into the passenger seat and forced her to drive to a wooded area where he raped and killed her. It can happen. After that I have always been aware of anyone near my car when I have a convertible with the top down.

Unfortunately, as C6BOB mentioned, increasingly, carjackers are not content with your car and wallet. They will kill you without a thought or shred of remorse.
And, yes, I have practiced drawing my weapon from where it normally rests in my vette.
I never worry about this stuff. Firstly because the actual occurrences are rare (and because they are scary get way more publicity). Secondly, I'd just give the person the car, tell them I NEVER want to see it back, and use the insurance to upgrade to a C7 Z06
But, I do worry that it's easier for those CIA drones to take pictures of me in one.
Being carjacked never occurred to me....
The only issue with a convertible is the aliens can see you driving and ....zap....get you in a tractor beam and take you to their ship, and then do all sorts of experiments on you....happened to me 3 times.

PS. Sorry for the "mirth". I cannot imagine one is MORE likely to be carjacked in a convertible than any other car. To the OP: If you fear this happening, don't buy a convertible.
Kid tried to steal the radio (factory radio, go figure) out of my convertible when it was parked with the top down. I had a motion sensor alarm that went off. I wasn't even in the store yet when I heard my horn start honking. Kid jumped out the back and left a big footprint scratch on the trunk that had to be buffed out. He also knew zero about stealing radios - apparently thought he could just pry the radio out with a screwdriver, so there was a big pry mark on the edge of the radio.
On another occasion I heard a page over the PA that a car with my license plate had the alarm going off. It was parked with the top up, but somebody thought they could pry the window open enough to unlock it or something. There was nothing in the car. They broke the clips that hold the window in its track. Had to disassemble the door to fix it. PITA. Now I always just park it unlocked and leave nothing in it.

Good, you're one in a thousand. So many just assume without trying it. When I was LE, with all duty gear on it was mighty hard to get my backup out in the event of a troublesome right-seat occupant, so I kept a blade or two tucked away.

In the situation I was in, a gun (other than resting on my shoulder ready to fire backwards) would have been useless, and probably would have gotten me shot in the head. He was in a position to see every move I made.
I still think carrying is a good idea though.. which I do now.
