There are hundreds of pictures here and the net. The gray is not new for 15. When you're dropping 60K for a car, it's worth doing some research before doing so.
I read you about none in your area, altho it's hard to tell just what area you are talking about. Still, it's your dollars and you chose to believe the equivalent of a "paint chip" ---at that, one that is online where there is at least one more complication to make it off-color.
I am sorry you didn't get what you thought it was going to be. For that reason alone, it would have been worth your while to go somewhere, even a few hundred miles away, to view a real car with the interior for $60K +/- worth of spending.
Several years ago, I didn't get a two-tone interior because there were no examples anywhere (new interior colors) at the time I was ordering (first week orders accepted). When I saw it, I wish I had gotten it.
I was excited that there was a new blue being offered for the '14 C7 and was very interested in seeing all the new '14 C7 interior colors as well. As I was strongly considering a Fall '13 purchase for a C7. I traveled at least +100 miles, twice, before narrowing my ext/int color preferences.
After attending the Aug '13 Corvettes at Carlisle (+100 miles) and then a trip to Kerbeck (+100 miles) I definitely wanted Laguna Blue. I did want something other than a Black interior so Gray was my only other choice having seen that combo once.
When an opportunity came in late October, '13 to see a Laguna Blue/Gray Dealer C7 in inventory I bought it within two days after seeing it. I love the combination both inside and out. And it's a 3LT with Gray everywhere.
Although a light shade of Gray, I've had no trouble keeping it looking new and I have installed black floor mats.
When I ordered my Crystal red, I wanted the grey interior. I did a ton of research, and view lots and lots of pics. It was exactly as I thought it would be. I guess you did not research it much, because the pics are out there.
I have Shark Gray with gray interior, wish it was darker so I bought Corvette Stingray Front Floor Mats, Black with Gray Stingray Logo and Gray Stitching. Now I am fine and looks nice.

Leather dyes very well especially if you just go to a darker grey. The black floormat idea has merit also. Personally I love a light grey. My C3 has "Smoke" interior or light grey, love it!
If you choose to dye you could do some cool 2 tone stuff!
Order some black lloyds mats and enjoy the contrast. I would not do any type of aftermarket painting/dying of the interior. OEM seat covers will also be available sooner or later if you don't want the gray seats.
That's what I did. The black mats breakup the grey carpet and look way better than the cheap mats provided by GM.
I put Ebony mats in my '05 Cashmere interior when I first bought it, and that has saved me many hours of work, and much frustration. I think the dark mat on a light color combo looks great!
When I was getting ready to pull the trigger on a NRB vert, I was trying to decide between gray and black for the interior. As luck would have it a local dealer had a NRB/gray vert in his showroom. It is a light gray for sure and the carpet is also lighter than I wanted - the black carpet would be a plus here as mentioned. Didn't want to make a project out of keeping the interior clean so I went with black.
ooph.. please let us know what the end result is.. might be worth GM swapping out a buyback car's black interior for you to be happy.. would go a long way in some people on the fences eyes imho...
I recently purchased a '15 Red Tint Coat convertible with Gray interior. I chose the gray interior color based solely on the pictures available on the Chevrolet 'build your car' website. To my surprise, the actual gray color was what I would consider to be Light Gray. The gray in the Chevy website pictures showed what could best be described as a Charcoal Gray. I definitely wanted a darker interior and only picked the darker gray based on the nice two-tone contrast appearance with the black dashboard, steering wheel and other interior items.
I have raised the issue with Chevy and am now in the process of resolution. My question to others is if anyone has had a similar experience and if so, what are my options for resolutions.

I actually had the exact same problem but found out about the light shade of gray about 3 weeks before the delivery of my car. I too was surprised at the charcoal color of the website vs reality of the light gray color. I called the dealer to see if I could change to jet black but it was too late in the order process. After a couple of weeks of seeing pictures and then actually taking delivery I actually love the gray interior. It doesn't get hot and actually comes close to matching the silver paint on my car. Not only that it won't be near as hot in the sun. I think charcoal or dark gray should have been offered but in the end I actually prefer the light gray over the jet black. Don't sweat it. I know the light gray looks good with CRM and LBM.
You saw it, didn't like it, and accepted delivery. Looks like you are stuck with it. Just trade it in for a 2016 with a different color interior. You'll get a new car with all the latest improvements and tweaks. A win/win( if the trade in financial hit bugs you, just make peace with the light color and enjoy the more open feeling the light gray creates and cooler temps during the summer).

I bought my NRB with gray interior over a year ago. I knew what the color would be. I replaced my mats with Lloyds gray mats. Everything looks great except for the black retaining rings which I may switch out.

As posted by the OP it was a museum delivery so yes, the dealer did force him to pay for the car, aka "take it" before he saw it. Unwinding a deal where the car has been purchased is virtually impossible without someone taking a loss and I doubt a mismatch between the color on the website, which has multiple disclaimers about the renderings, and the actual color would rise to something GM or the dealership will shell out money for.
I ordered the jet black interior and was disappointed that it wasn't darker black. It really seems, IMO, to be more of a charcoal color.
After eight months, I've gotten used to it, but would still prefer a blacker black.
I just got my NRB with gray interior and it I love it, just what I wanted and expected. I wanted a lighter interior.
None of the exterior colors or the interior colors come out accurately on the website. I went around to as many dealers as I could and looked at cars in stock so that I could see the actual colors in person, before I ordered.
I am not sure what Chevrolet could or should do if you order a color you don't like.
