Anybody done it? I'm still a little afraid of flooring the gas with the clutch in and having it red line and blow up my car if I didn't set launch control properly. They should have added a little message in the DIC saying "Launch Control Set".

I'm in my car waiting for wife shopping now. I'm in track mode hit center button twice.... Traction control and active handling are now turned off. I don't see anything else.

You are now in Launch Control. My base 2014 says Competitive Mod but maybe they changed that feature.
A Launch Control feature is available, within Competitive Driving Mode (except Z51 with Magnetic Selective Ride Control) or Performance Traction Management (Z51 with Magnetic Selective Ride Control), on all vehicles to allow the driver to achieve high levels of vehicle acceleration in a straight line. Launch Control is a form of traction control that manages tire spin while launching the vehicle. This feature is intended for use during closed course race events where consistent zero to 60 and quarter mile times are desirable. Launch Control is only available when the following criteria are met: . . . Competitive Driving Mode is selected (except Z51 with Magnetic Selective Ride Control) or any of the Performance Traction Management modes are selected (Z51 with Magnetic Selective Ride Control). The TCS light comes on the instrument panel and the appropriate DIC message displays. The vehicle is not moving. The steering wheel is pointing straight. Manual Transmissions . . The clutch is pressed and the vehicle is in 1 (First) gear. The accelerator pedal is rapidly applied to wide open throttle. The Launch Control feature will initially limit engine speed as the driver rapidly applies the accelerator pedal to wide open throttle. Allow the engine rpm to stabilize. A smooth, quick release of the clutch, while maintaining the fully pressed accelerator pedal, will manage wheel slip.

It won't hurt it even if it did bounce on the limiter. You could bounce off the limiter for a very long time before you blew it up. Possibly hours. Maybe never. You won't break it.
Anyway...I've never tried LC on mine, but I agree, 5k is high. 2500-3000 is more realistic. That's where mine seems to launch best with tc on. Also don't side step the clutch. Let it out quickly at 2500 or so and it doesn't really fall on its face like the car in the vid. I'm sure the driver knows that but it just having fun...
