Mine (S6 Edge) had similar issues and it was the cable. The stock cable that came with the phone didn't work either - I just kept trying USB cables until I found one that actually worked. Some things like battery cases can also interfere.
So keep trying different cables until you find one that consistently works. Even my old Oneplus One works with AA in the Vette.
Also, you don't need to turn off Bluetooth. I get in the car with the Bluetooth turned on (it's on all the time because I use an Android smartwatch and my Microsoft Band 2), turn the car on, then hook up the phone to the cable that goes into one of the USB ports in the armrest area. That's it, give it a few seconds and the projection sign turns to AA.
And if the projection icon does not turn to the AA icon - tap the projection icon! Then it should change. I find I normally have to do that.

Haha, that's weird. If it happens due to some weird race condition (on the rare instance it happens, it's if I plug it in just before I start the car or while it's turning on), I usually just disconnect the cable and connect it again and it's all good.
If you go to your phone is AA running? You say the app closes. Is it dying or just closing?
AFAICT AA will not connect until first your car connects to Bluetooth. Sometimes the AA icon appears in the projection icon. Sometimes it doesn't. Often pushing projection puts the AA icon there and then one more tap and I'm in. Sometimes it says look for messages on the phone. Sometimes I see it asking for data permission yet again.
Question: How many cars are configured in the AA app on the phone? I have two. Don't know why. I named them "Thing #1" and "Thing #2".
It'll try to load the application twice as AA turns on automatically with bluetooth then when I plug it in it tries to launch the app again. I'll see two icons on taskbar at top of phone.
You could run AA on your phone, tap the menu then Settings then Auto Launch and turn off the auto launch when connected to Bluetooth. I have my set to on and to auto launch only when connecting to my car's Bluetooth.
My usually routine when getting into my car is to first put my phone on my ProClip and connect the USB. I might do other things like put on the seat belt, get my sunglasses or put my wallet in the secret compartment. So by the time I start my car and the Bluetooth connects my phone is already connected to the USB cable.
Note there are many icons in the notification area and notification pull down like Car Mode Activated, etc. I wish they would limit them - too much junk.

Even if it were available today, I still can't be bothered by plugging in my phone every single damn time.
I'll take wireless charging and forget about that mess.
When you start AA you're at the main screen. Cards are presented like a weather card and whatever Google Maps searches you did. At this point you're poking the display anyway. So you swipe away the weather card to reveal more destination cards.
BTW there is no voice command to say "OK I saw the weather card. Please get rid of it", for example.
I don't have this problem. Then again, I hardly look at the screen unless I am using maps. From start to finish I only use voice control. I don't touch the screen unless it's to hit the home button at times.

Huh? Bothered to plug it in? Your driving a car that requires much more attention. How could you be put off by plugging the end of a cable to your phone? How do you charge the phone?

It's highly dependent on how you use Google. For example, assuming you use Google, sign into Google when you are browsing, etc. - go to Google Maps and search for a destination. Anywhere. Go to AA in your car - you should have a card for that destination. Log into your Google Calendar, make an event for tomorrow that contains a location. Go to your car and start AA. You'll have a card for that too.
If you actually use Google and it's facilities such as Maps, Calendar, Contacts, etc. then you will find there is an integration between these things that is extremely useful.
However if you're paranoid or technologically illiterate then I can understand you not getting it...

The First time I tried AA I Loaded the app on the phone first. Then when I plugged the phone into the cars USB, it loaded AA and Died. The screen went blank in car and the only way to fix it on My S7 edge was to close all apps. Then just plug the phone into the car USB without starting the AA app. Start AA from the touch screen in your vette. Works every time.

This is really interesting, and I appreciate all the inputs. On ours, if we don't turn BT off on the phone before we start the car, it hooks to BT and then we can't get AA to run at all - even after hooking the cable, waiting, hitting the projection button, etc. But turn BT off on the phone, and then AA lights up. Maybe there are some BT settings I can check.
We really, really like AA. We still get all the phone functions when it's running (read texts, calls, etc. etc.) only everything is much easier when AA is running. Don't have to push steering wheel buttons or anything, just say 'ok google' and tell it what you want. Sometimes if I'm running really loud music (and Pandora sounds so much better thru the wired connection of AA) I have to push the SW button for just a moment (if you hold the SW button down too long it goes to factory voice recognition - NO THANKS as google voice recognition and google maps for nav are sooooo much better) because my phone can't hear my 'ok google' command.
