As others have said, sounds like ABS (which is separate from TC -- I don't think you can turn ABS off). Push less hard on the brake or don't press at all.
Fugly is correct, ABS cannot be turned off. The OP may also want to verify that the new tires are the same size as the old ones - the mention of $100 tires raises the size issue in my mind as I know of no $100 rear tires in C7 sizes, unless they were used tires.

Doing a launch control requires your foot on the brake in TPM mode. it limits wheel spin and launches your car from 0 to whatever speed with the wheels glued to the road. I have a 2014 A6 with A&A SC spitting out 610 whp and using the brake in track mode submenu (wet) limits the amount of wheel spin. when I release the brake it will spin for 2 seconds, 2nd gear gets a chirp, 3rd gets a chirp, 4th gets a chirp and I get to 60 mph in 3.1 seconds v

Care to provide a link to these $100 tires? I'm sure many are curious where we can find tires for $150 - $200 cheaper than tire rack prices. I'm assuming this isn't a GS or Z06

Both ABS and Stability Control can vibrate the pedal when active. With the brake pedal applied lightly and the throttle jammed down hard the spinning rear wheels may start pushing the front wheels with the fronts rotating at a slower speed than the rears. The ABS might detect this as the front wheels in an incipient lock up state and and activate to keep them from locking. The only thing I can think that is close to similar is when driving on icy roads if you lightly touch the brakes to slow down the rear brakes aren't applied hard enough to over come the engine torque from an idling engine so keep turning while the front wheels with no drive line forces applied to them try to lock up and ABS activates to keep them from locking. This situation is well known to winter drivers.
