I did a 10mph rolling burnout on my stock tire without any problem, got new tires and tried them again, tires are spinning, but now when I do it my brake paddle fights back, it is pushing back on my feet strongly to the point I where I have to let go because I am afraid of something that might burst... any idea why the brake paddle is fighting back? I am not an expert in any field...

Sounds like Traction Control kicking in. Did you shut off TC before trying a burnout?
OP, there is another forum that is much more civil. I guarantee you would not get these responses there. I come in and out of this forum just to learn about other things not discussed in the civil forum and to get a laugh from some of these posts in this forum.
Please define what fight back actually means in your post?
Your description is a little non-specific, but one could equate this to something like the ABS system activating, which would cause a rapid pulsing sensation in the brake pedal. Seeing that wheel speed sensors are part of the ABS system input it might be beneficial to make sure that these haven't become disconnected or damaged as a result of having the wheels off when the new tires were installed.

It's kianda like you said. I am trying to push the brake paddle down, but it's also trying to push back up in multiple quick pulse strokes. I will ask around in my friend's shop.
Thanks for the useful informations!

Yeah some people just wanna be a badass and talk like they know everything, but back to the point. It's like I am trying to push the brake paddle down, and when the tire spins, the paddle is also trying to push back up in a rapid pulsing pattern. Hopefully you can understand my poor explanation haha..
Not having an A8 but read alot on here. I would guess the new tires, tho cheap, are providing such good "bite" (traction) that they won't spin. I have seen some posts where folks said they had to be physically standing on the break to hold car. With TC off I don't understand how they wouldn't do a proper burnout tho. Are you doing a rolling burnout as your original post said or from a dead stop using brakes to hold while burning out? I ask because reading your post again, I don't understand why you would be on brakes while doing a roll burnout. Probably just me being dense!

I meant holding the brakes so I do a slow rolling, like 10mph, sorry my rolling burnout confused you.
As others have said, sounds like ABS (which is separate from TC -- I don't think you can turn ABS off). Push less hard on the brake or don't press at all.
