I had the exact same issue with my 15 z51 this passed weekend. Had been driving on the highway for 4 hours then got off to get gas. While sitting at the light I noticed the temps start to climb and the AC not working. Got the the gas station and the coolant temp was 245 and noticed the fan was not running. Let it cool down some, checked the fan connector, spun the fan...all seemed normal. Fan still did not run so I smacked the center of the fan motor with my hand then got back on the highway. Later that day the fan was back to working as expected and the car was not overheating. I think it is a faulty fan motor.
and why one always carried a rubber mallet in the trunk....
When I had this problem the and brought the car to the dealer and the dealer couldn't find anything mechanical they said it was likely a software problem. By turning off the engine the software resets. Hasn't happened again, but if I'm stuck in traffic and overheating, I'm going to shut it down and restart it. I'll let you know.

Ive had the over temp before but never to the point of the warning ding ding ding sounding. And coolant bleeding out. Ugh. Was a short drive on I-75 then looping around a parking garage in traffic.
Cooling fans were not running.
Im currently waiting for a flatbed. And of course it’s a holiday weekend.

Restart the car and I'll bet the cooling fans come back on. I had the same issue several times on my 2014.
I’m sure it will. But not taking chances. Flatbed almost here.
Theres a reason it did this. Bad relay or something.
Hopefully your dealer can fix it. Mine never could get it to do it and there were no code so they wouldn't fix anything. After four times of overheating I got rid of the car.

Started the car...fan came on. Figured I'd start driving towards the dealership. If it overheated again then I'd stop and call for a tow again.
Of course...it ran just fine. LOL.
Now...since it belched some coolant, should I put more in? Add water? I haven't checked the levels yet. Just got her home for now. My weekend has been beyond crazy with my youngest graduating HS...party...family...etc...and now this.
Never had a heating problem and my 2015 Z-51 has 23,500 miles and has been in lots of stop and go traffic then only problem is your clutch foot gets a little tired !!! Wayne

Add a 50/50 mix of water and Dexcool to bring it back to full.
I just ordered the new Z06 600 watt fan to change out on my new car, it will be here this week.. not taking any chances with overheating and I know for a fact the new fan fixes the overheating.. it takes 6 bolts to change out

I started this thread a year ago and wanted to update my situation, I now have 9500 miles on my car and 3 road trips in the Texas / NM heat and have not had one problem since upgrading to the ZO6 600-watt Radiator Cooling Fan purchased from Chevys Corvette performance parts (Part# 23376530), I also replaced the Grill to the ZO6 which Chevy says increases front end airflow by 17% over the Z51 factory set up ( Part # W/O Front camera 23387122) . I was told by the dealer originally the Mild 2 Wild switch was causing my issue so they unplugged and said it was fixed, but that was BS after it happened again at which time I made the upgrades and have had no problems since.

Sorry, I left out I did reconnect the M2W switch after the up grades and not a problem over heating. I am also running the Borla X Pipe and the MagnaFlow Competition Series Axle-back.
The exhaust was done prior to me doing the cooling upgrades and I figured the dealer would also blame that, but they never said a word about the exhaust being changed.
