All you have to do is worry about dropping rpms below 900 rpm while driving. That also means you can shift to 7th anytime the rpms are above 900. Same with the other gears. From the Owner's Manual: If the engine speed drops below 900 rpm, or if the engine is not running smoothly, downshift to the next lower gear. It may be necessary to downshift two or more gears.
Many states actually have HIGHER limits than NY!! The simple solution is to drive somewhere with higher speed limits! ...
I use it regularly at or above 70 mph and it works well for fuel economy, reduced noise and still has enough oomph for normal acceleration...
I live in N.Y where the speed limit is mostly 55mph. I hardly uses 6th let alone 7th (80 mph 1.5k rpm). I wish the car would have 6 instead of 7 gears. 5th is easy to hit quickly in my wrx, miata, mustang etc but i went into 7th once in a while in the C7. I only have the car for 2 months, I am sure it will get better. Just ranting
Why Why would anyone buy a stick these days The autos will out-perform any stick. If you want to play with something get yourself a nice young female and you are good to go.
Speed limit around here is 65 but when there’s light traffic the faster drivers are cruising 85-90. 7th works great at those speeds. In that Hennessey video the guy hits 200 in 5th.

Honestly, I like the manual transmission too. This car is my first auto for "MY" car. The wife and I have had autos but right now she has the stick and I have the slush box. Shoulder surgeries can make you change your priorities. Damnit!

Like most of mentioned 7th gear has a very select use. I have used it a few times when cruise is at 85. However, I do not like very much because the usual pull away power is not there so unless the highway is empty I leave in 6th...you just never know when you have to pull away from a truck,etc.
Also, down shifting from 7th to 6th i find a little troublesome....but after use you get the hang of it. From what I can tell at 85 you save about 300 rpm less 6th vs 7th.

I think someone mentioned it before but 4th is 1-to-1 thus 5, 6 & 7 are all technically over drive gears.
On track I've done 124 MPH in 4th and still hadn't reached redline so you got plenty of revs down there to pass at highway speeds.
I thought the same thing until I took it on a long road trip from SF Bay area California to Seattle Washington. At speed 7th gear makes lots of sense. I never broke 100 but mostly went between 75 and 95. Made it there in just over 10 hours in 7th gear most of the way. Got 19-21 MPG as well.

Depending on driver skill, an A/T or DCT may beat an M7 by a fraction of a second on the track or quarter mile, but the smile from seamlessly using a manual lasts a LONNNNG time...

So you are going to outperform where??? on the highway at 70mph. or on the street at 30 mph. or going into your garage at 3 mph. Driving an automatic sports car is like driving a Buick ..Put it in D then roll along..oh OH but I can use the paddles well that was a few min of fun now back to D.. There is a rise we get from throwing those gears,, upshift ,,down shift etc.. Maybe you never rammed gears before but fo pure fun, nothing beats throwing gears. . If the Corvette Auto 8 speed will beat me in a second or so well thats fine . The auto will get on the highway a second sooner. Or maybe a half second in the garage. I doubt you will find too any forum members tracking at 150 MPH..

Ditto... That became my habit when manufacturers demanded a 1-4 shift to make CAFE standards... Works great in the M7 'vette 'cuz there's no shortage of torque...
