Indeed, every track car I have run I have put on coilovers and valve them how I want (I have tools and a shock dyno in my garage). I prefer not to have tons of aero when it is a dual purpose car.
Interesting, I have driven cars with lots of low end torque. Mainly they have been all FI engines and not N/A. Still this was a very clear ON/OFF feeling, it very well could have been that the nanny's were on. Seems like I'm right in assuming it was partly me and very maybe the car's history being a bit of an unknown it will remain a ?? until i try another. Unfortunately there are no other M7's near me. I have the 8l90e in my ctsV and I for sure do not want it in a vette if I am going to get one.
Here's what the throttle map looks like in a stock 2019 GS. Guess where you feel the "on/off" switch....
Assuming I find a GS, I might just spring for hp tuners vs the throttle controller. Seems the market is rather lukewarm.
The only thing I'd suggest is that you get used to the car first. Even if you have the car in "Track" and the PTM mode set to Sport 2, you'll feel and hear the throttle intrusion at corner exit...."blat blat blat blat" sort of thing. Once you're used to it, you'll find you can put the gas pedal on the floor and let it do its thing. Once you're at that comfort level, go to PTM mode "Race" or decide to start mods. It's a very capable car.
You may figure out what fits your driving style and needs in a single session or it may take several track days. Experience certainly plays a role but so does how hard you drive....ie 7/10s and having fun but not worried about being the fastest guy out there vs running 10/10ths on the ragged edge after FTD and/or a personal best every lap.
If you're going to track it, YES get the Z51 (preferably an M7). And, you'll likely not need buy aftermarket fully-forged wheels... unless you just want to. Enjoy.
