I love my C7 GS...I wanted the wide body , but felt 500hp was plenty for me! Good luck in your search
I'll never drive our 2015 anywhere near the limits of it's high-speed performance or handling capabilities (though I'd love to have the opportunity to drive on some of those straight-as-an-arrow roads with limited traffic that I see on TV every so often). I'll never do that with any of our vehicles; or even with any potentially purchased vehicles.
In my case, I'm basing my purchase decision on aesthetics; do I like it's looks, it's interior, it's available comfort and convenience options?
If you'll drive your car the way I drive mine, make your choice the way I made mine.

We just moved from Tidewater Va to Connecticut.
I just started looking for a coupe. My vert has been driven once
in the last 4 weeks. It’s either too cool/cold, the roads covered with sand and the
roads are coming apart.
I just believe the coupe is more suited to the north.

I believe that the coupe is better for those who are not going to run it with the top down that much. For me, having that extra mechanism that probably eats some of the space isn't a worthwhile expense since I will never run with the top off. OTOH, if you are the type that will drive with the top off even if you have to wear a heavy jacket and have the heater blasting at max, a convertible is probably a better buy.

When we lived in Virginia, the vert top was usable almost 10 months of the year.
I had a 2016 Z51 coupe before I went back to the vert.
Never took the top off except to clean and lube the gaskets.
Plenty of nice used Corvettes available. The biggest problem in buying used is getting one someone best the crap out of. I've had 6 Vettes, only bought two new. I went for low miles, color, options, always bought from a dealer or person I trusted( sounds funny but this is important). My current and likely last is a 2017 GS LT3. Miles when bought 9500- today 24k.
I can not think of anything I do not like about this car.
Only issues were Battery replaced, Radiator Thermostate replaced rear hatch sweak?
I replaced orginal wheels and upgraded to blaque diamond with new tires. Added hood strip/red trim, engine dressup stuff......
My point is Get a car you like, from a trusted source, that you would like to dress it up to make it yours. then drive it.

3. 2013 C6 60th Aniversary ed Z06 LZ4, bought new- very pretty car and fun to drive, but being 60th aniversary not a good car to upgrade or mod.
Just my 2 cents as a fairly new C7 and first corvette ever owner...if a C7 go 2018 and up due to issues with transmission, 3lt has dash delamination issues, and widebody wheel cracking issues. I am sure there are other things that I still don't know about. None of that has stopped me from loving my C7, and everyone else too because it gets a LOT of attention wherever I go. LOL
...I love the wide body, but the Stingrays are very sleek if that is what you like....
I previously owned a C6 Z51 for 14 years. I currently own a C7 Z06. Obviously, they're nothing alike. However, I can make some general comparisons between the C6 and C7 which may be helpful.
Most people will agree that the C7 is a more refined & sophisticated car than the C6 in every way.
With that being said, I feel that the C6 is a better looking car, especially from the rear. The C6 Z06 is one of the best-looking Corvettes ever, IMO. On the C7, I could do without the cheap plastic trim pieces & louvers. Although, the C7 interior is MUCH nicer than in the C6. For many, that's enough of a reason to by a C7.
The C6 engine and suspension have a more raw feel than the C7. I personally like those aspects of the C6 better. The engines in the C7 are smoother than in the C6; and are less muscle car sounding when you add an aftermaket exhaust. The C7's handle much better than the C6's. You have to really push a C7 hard before it feels like it's trying....especially in a GS or Z06. These are the same reasons why many of us prefer the C7 over the C8.

If handling is important, why take a step backwards? Kinda like me saying "To support my wife and kid as I was going through school, we had to eat Mac and Cheese 3 meals a week. Today, I'm much better off and can eat steak and lobster every meal but I still want to keep that old habit.".
So, I decided on a C7. Found a great deal on a Z51 3lt. It's a great car, with plenty of power. Although I'll never reach the max of its capabilities, it responds well to how I drive it. Glad I chose this over the C6 because there's a huge difference in the driving experience.
From what you say here, you sound like you're leaning toward a C6. However, I opted NOT to get a C6, instead keeping my C5 (which I still have even after owning my C7 for 8 years, now). The C6 is simply a mild update of the C5, whereas the C7 is all new and as far as I can see a much better, rigid chassis. Though your call (of course), I'd recommend a C7 every time. Btw, I opted to pass on the C8, though I really looked forward to a mid-engine Vette. Since that's irrelevant here, I'll stop for now. All the best, in any event!
